1Wash sweet potatoes well and trim off ends.
2Slice sweet potatoes into 1/4" thick slices. We recommend using a mandoline.
3If desired, pretreat by blanching.
4Place in a single layer on Excalibur Dehydrator Tray.
5Dry at 125 for 7-11 hours or until brittle.
6Let cool completely.
7Grind dried sweet potato slices into a fine powder using a high speed blender or coffee grinder.
8Store in an airtight container.
For reference, 7 sweet potatoes produce approximately 1 cup of Sweet Potato Flour.
