Raw Cacao Pecan Creme Sandwich Cookies Recipe

Ingredients

Cookies:

1/2 cup organic Cacao Powder

2 tbsp organic Raw Agave Nectar

2 cups organic Oat Flour

1/4 cup organic Coconut Butter

1/4 cup grade B Maple Syrup

Filling:

1/3 cup organic Coconut Butter

2 cups Pecans (soaked)

1 tsp organic Cinnamon

2 tbsp organic Raw Agave Nectar

Directions

Cookies:

1Put all ingredients into a food processor and pulse to combine

2Whisk together all wet ingredients

3Add the wet ingredients to the dry ingredients and process until well combined (add 1-2 tbsps of water if needed)

4Flatten out to a disk shape on a Paraflexx lined Excalibur Dehydrator tray about 1/4 inch thick

5Cut with a cookie cutter of your choice and peel away the extra dough

6Repeat until you have used up all the dough

7Dehydrate at 110 degrees F for about 4 hours

8Transfer cookies to tray without Paraflexx and continue to dehydrate for about 2-4 hours

9The cookies should be dry but not brittle and a little softness should remain

Filling:

1Put all ingredients into a food processor until very well combined

2Use for filling between two cookies

3Assemble the cookies by spreading between two cookies and enjoy
